How about a drink?

Since all my posts lately seem to be of food, how about I throw a drink in here for good measure. I love this time of year with all the fresh fruit and vegetables. It is so easy to keep good and healthy food in the house when it is in season and so cheap and yummy. I saw a recipe in a magazine the other day for a drink with Gin and Cucumber. I thought I had dog eared the page but I can't find the page now that I want the recipe. So, I did some searching and found a similar recipe to make a drink today. It is so amazing and tastes so fresh and yummy, like summertime. So I thought I would post it here for all of you to try too. Cheers!





Ingredients

  • 2 slices peeled cucumber, plus 1 unpeeled slice for garnish
  • 6 fresh mint leaves
  • 2 teaspoons turbinado sugar
  • 1 ounce fresh lime juice
  • 2 ounces cucumber-infused gin (such as Hendrick's)
  • 3 to 4 ounces club soda

Directions

Place the peeled cucumber slices, mint, cilantro and sugar in a cocktail shaker and muddle. Add the lime juice and gin. Fill the shaker halfway with ice and shake vigorously for 1 to 2 minutes (this seems like a long time, but it's essential).

Fill a cocktail glass with fresh ice. Strain the drink into the glass, top with the club soda and garnish with a cucumber slice.

COOKS NOTES:
I made this with Gin and I also made one with Vodka, both were very good. I also used Sprite instead of club soda because it's what I had. I am not sure what Turbinado sugar is so I just used my normal sugar that I already have in the house. Remember, don't let a recipe box you in, think outside the box and make the recipe yours! ENJOY! :-)

I can't WAIT to try this drink! BTW, turbinado sugar is raw sugar (the coarse, brown stuff). It's healthier for you, as sugar goes, and I think has a much richer flavor. You can find it at most stores.

Sounds very yummy and light. Gin and Tonic with lots of lime is my favorite drink. Although right now my goal for the next 6 weeks is only water/tea/coffee drinking 1/2 my weight a day. Not easy. On the upside, getting more opportunities to hide out in the bathroom and read a bit from all the fluids. :)
